Dinner in a Flash
I’ve been having such a great time playing with my new Instant Pot and trying out so many awesome recipes. I still can’t get over how delicious these Pork Chops were. Anyway, so I came across this recipe for Fettucine Alfredo made in the pressure cooker. Wanna know the best part? You don’t need to pre-cook the pasta. That was what sealed the deal for me!
I didn’t have any Fettucine in the pantry, but I did have some spaghetti. I decided to use that instead, and it still came out so well. Just look at it.
This was super easy to make. Prep time was about 5 minutes, and by prep, I mean dumping it all into the pot. Cooking time was another measly 5 minutes. Winner!
So far, I’ve cooked this about 3 or 4 times now – each time, swapping the ingredients with what I had on hand. And each time, it worked beautifully. The pasta is done just right and is NOT mushy at all. I seriously cannot fault this recipe.
Now, while that was cooking, I decided to try out a recipe for Brownies in the Air Fryer – (another kitchen toy that has blown me away). The brownies had a great flavor, but it didn’t set too nicely in the middle. So I’m going to see what I can do to tweak it so that it’s delicious through and through.
I can’t stress how much I love this. It has really, really changed my cooking regime; giving me back at least an hour back each day. I suggest to everyone who will listen that they need to get one.
Righto! So here’s a list of the ingredients. Like I said, having made this a couple of times now, I’ve managed to swap the ingredients for whatever I have handy.
Ingredients:
- 1 1/2 Cups Chicken Broth
- 1 Cup Evaporated Milk (I used regular fresh milk)
- 1/2 Cup Heavy Cream
- 1 teaspoon Minced Garlic
- 1 teaspoon Dried Thyme
- 1 teaspoon Italian Seasoning Mix
- 1/4 teaspoon Red Pepper Flakes (or less)
- 1/4 teaspoon Salt
- 1/8 teaspoon Ground Black Pepper
- 8 oz Mushrooms, sliced
- 1/2 lb Dry Fettuccine Noodles, broken in half (I used spaghetti noodles)
- 1 cup Mascarpone Cheese – room temperature
- 1 cup Parmesan Cheese, shredded
